A Little Info About Ice Wines
It sounds like weird food science, but it's true: old, fungus-ridden, frozen grapes are transformed into an utterly sweet desert wine. Syrupy sweet and often sold in small bottles (yeah, it's that sweet), Ice wine takes its name from letting the grapes stay on the vine long past a typical harvest date, into winter-like conditions where the grapes freeze on the vine. Letting the grapes (often Riesling grapes) remain on the vine extra long maximizes the sugar content and results in pure sugary madness.
